Ingredients:

  • 2 small bags small organic red potatoes (or mixed colors and varieties)
  • 1 medium yellow onion, roughly chopped
  • 1 head garlic, cloves separated and peeled
  • Kosher salt (optional)
  • 4 tablespoons grapeseed or olive oil

Directions:

  1. Preheat oven to 375 degrees with rimmed baking pan in oven
  2. Wash potatoes and chop evenly (approx. 1/2″ pieces)
  3. Mix potatoes, onions, oil, and salt in a large bowl
  4. When oven is hot, pour potatoes in roasting pan
  5. Cook for 25 minutes, stirring occasionally to prevent sticking
  6. Add garlic and stir
  7. Cook for 25 minutes, stirring periodically, or until potatoes are brown and tender
