Ingredients:
- 2 small bags small organic red potatoes (or mixed colors and varieties)
- 1 medium yellow onion, roughly chopped
- 1 head garlic, cloves separated and peeled
- Kosher salt (optional)
- 4 tablespoons grapeseed or olive oil
Directions:
- Preheat oven to 375 degrees with rimmed baking pan in oven
- Wash potatoes and chop evenly (approx. 1/2″ pieces)
- Mix potatoes, onions, oil, and salt in a large bowl
- When oven is hot, pour potatoes in roasting pan
- Cook for 25 minutes, stirring occasionally to prevent sticking
- Add garlic and stir
- Cook for 25 minutes, stirring periodically, or until potatoes are brown and tender
