  • 10 ounces onion, chopped
  • 3 ounces celery, chopped
  • 1 pound sweet potato, peeled and chopped
  • 2 teaspoons paprika
  • 1 teaspoon turmeric
  • 1 teaspoon dried basil
  • 1 bay leaf
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon cayenne
  • 4 cups vegetable or chicken broth
  • 1 large tomato, diced
  • 1 large red pepper, diced
  • 1 (13 ounce ) can black beans, rinsed and drained
  1. Sauté onions, celery and sweet potatoes in olive oil.
  2. Add paprika, turmeric, basil, bay leaf, cinnamon, cayenne and broth. Simmer covered for 15 minutes.
  3. Add tomatoes, bell pepper, and black beans. Simmer another 10 minutes or until vegetables are cooked to your liking.
