Purchase the ingredients and cook along with us.
- 10 ounces onion, chopped
- 3 ounces celery, chopped
- 1 pound sweet potato, peeled and chopped
- 2 teaspoons paprika
- 1 teaspoon turmeric
- 1 teaspoon dried basil
- 1 bay leaf
- 1/8 teaspoon cinnamon
- 1/8 teaspoon cayenne
- 4 cups vegetable or chicken broth
- 1 large tomato, diced
- 1 large red pepper, diced
- 1 (13 ounce ) can black beans, rinsed and drained
- Sauté onions, celery and sweet potatoes in olive oil.
- Add paprika, turmeric, basil, bay leaf, cinnamon, cayenne and broth. Simmer covered for 15 minutes.
- Add tomatoes, bell pepper, and black beans. Simmer another 10 minutes or until vegetables are cooked to your liking.
