I have to admit that as a kid, I do not ever recall eating kale. In fact, I think that I only thought of it as an ornamental plant that people put out with their pumpkins at this time of the year. I sure was missing out!
When, over twenty years ago, I started down this road of using food as medicine to help heal my body, I learned a lot about kale and many, many other healthy foods.

But, reading about a vegetable in a book is a lot different than actually cooking it! I had to experiment with various cooking methods and seasonings to discover how versatile and delicious kale can be.
How do I use kale in my cooking? Let me count some of the ways. I add kale to:
- Smoothies
- Salads
- Egg scrambles and omelets
- Soups
- Stews
- Curries
- Pesto
I also make kale chips, a favorite snack in my house.
I sauteed kale with onions and garlic, for a quick and delicious side dish.
What does it mean to be considered a superfood?
A superfood is something that is extremely high in vitamins, minerals, and other nutrients that are vital to our health. Kale is at the top of the list, among dark leafy greens.
