1/2 medium sized watermelon
2 cups fresh mint leaves
3 limes
1 medium sized red onion
1/3 cup olive oil

  • Using a melon baller, scoop out watermelon and place in a large bowl.  You should have approx. 8 cups. (Alternative is to dice melon into 1 inch cubes.)
  • Clean, dry, and chop mint.  Place in bowl with watermelon.
  • Peel and dice onion, and place in bowl with mint and watermelon.
  • Juice and zest the limes and pour into a small jar.
  • Add olive oil to the lime juice, shake well, and pour over watermelon mixture.
  • Stir well, and refrigerate.
  • Before serving, place the watermelon salad in a glass bowl.

 This recipe is gluten and dairy free and is cleanse-friendly.
